New Year's Soup


I got a new cookbook for Christmas. It's a Soup cookbook and since I love to make soup it's a perfect fit! :)

I decided to make Navy Bean & Ham soup for New Year's Day.




I soaked the beans the night before (I actually remembered to do this!) and threw everything else in the crockpot yesterday morning. What I found strange was that it said it made 6 servings yet it filled TWO CROCKPOTS. Who are you serving?? Paul Bunyan?


Anyway - I went ahead and made the soup and while it smelled delish...the results were only...blah.



The soup is missing something - some kind of spice, some salt some....???

The ham I bought was really really tasty as I was cutting it up but after sitting in the pot all day tasted very bland.

We have so much leftover...I don't know what to do with it. I'm considering adding cooked carrots & celery and I dont' know what else? Any spice suggestions? I know it'll freeze up well and we'll eventually eat it all but I'd like to make it a little tastier!

**I also would like a new digital camera as I think my pictures are very blah. Too bad my birthday is so far away!**

Definitely add some sauteed carrots, celery and garlic. Also, to liven it up a bit, you might want to add a splash of apple cider vinegar. As a soup fanatic myself, I find a little acid often does the trick. Good luck!

I was going to suggest acid, too. I'm betting the beans leeched the salt right out of the ham, so adding more salt might be in order. Garlic or onion would also probably help.

GARLIC. And Carrots and onion. You could even add a little dash of cayenne. And even though this sounds blechy - try some velveeta in it. Cheese makes everything better.

I am sauteeing some carrots & celery & garlic in olive oil as we speak. I'm also adding salt & a dash of something yet to be determined. Oh and I'm adding bacon. And maybe cheese. So in essence changing the recipe totally. I"ll report back my findings.

Oh and next time? I'm using HALF the beans, sheesh!

Totally jealous here about your soup cookbook. Lousy bean soup or not. I heart soup. (especially when you follow all the steps in the recipe, giggle)
